Fiesta Salad with Cilantro Lime Dressing

Ever crave a salad? Did you think that was possible...? Because I made this for dinner and have eaten it twice since then and just want more 😋



What do you need? Not much! This comes together quickly and is absolutely delicious. I used a romaine mix and some shredded lettuce mixed in together for the base. Just add some pico on top, corn, black beans, fajita chicken, and my new fav homemade salad dressing (adapted from Spoonful of Flavor's cilantro cream drizzle). See below for ingredients. Enjoy!

Creamy Cilantro Lime Dressing

  • 1/2 c plain Greek yogurt
  • 1/4 c olive oil
  • 1 bunch of cilantro
  • Juice of 3 small limes
  • 3 cloves of garlic
  • Salt to taste
  • 1 tsp. honey
Mix the above ingredients in a food processor and that's it! You have a salad dressing.

  • Salad mix of your choice
  • Black beans, rinsed
  • Corn
  • Pico
  • Fajita chicken (HEB sells a frozen, pre-cooked, pre-seasoned bag of this! It's delicious and saves time when you're looking for 
  • Creamy cilantro lime dressing
Some extra cilantro would have been amazing on top of this baby but I didn't buy enough for that. Also, I forgot the shredded cheese, but put it on my leftovers for lunch the next day - amazing touch!
