Chicken Bruschetta Bake

Do you know what I love?  Easy meals. You know what else I love? Balsamic vinegar and tomatoes. With some inspiration from The Seasoned Mom and Clean Food Crush  (both delicious recipes by the way!) I have created this new favorite - the Chicken Bruschetta Bake. Don't you love a one-pan meal?!? They're my favorite.  Because doing dishes is my least favorite. Serves : 2, with lunch leftovers Ingredients : For the Chicken: 1-2 large chicken breasts salt & pepper For the Sauce: 1/4c maple syrup 1/4c dijon mustard 3 tbsp balsamic vinegar 3 garlic cloves For the Topping: 3 roma tomatoes 1 bunch fresh basil 2tbsp balsamic vinegar 1tbsp olive oil salt & pepper dried rosemary 1c shredded mozzarella Instructions : 1. Fiesta Salad with Cilantro Lime Dressing

Ever crave a salad? Did you think that was possible...? Because I made this for dinner and have eaten it twice since then and just want more 😋 What do you need? Not much! This comes together quickly and is absolutely delicious. I used a romaine mix and some shredded lettuce mixed in together for the base. Just add some pico on top, corn, black beans, fajita chicken, and my new fav homemade salad dressing (adapted from Spoonful of Flavor 's cilantro cream drizzle). See below for ingredients. Enjoy! Creamy Cilantro Lime Dressing 1/2 c plain Greek yogurt 1/4 c olive oil 1 bunch of cilantro Juice of 3 small limes 3 cloves of garlic Salt to taste 1 tsp. honey Mix the above ingredients in a food processor and that's it! They are deliciously magical, keep me full all morning, make a fantastic snack, and make you lots of friends if you share them. They are my go-to recipe when I forgot about the bananas I bought during last week's grocery trip, and I will even buy bananas to let them go brown sometimes just so I can make these babies! I got the recipe from "The Healthy College Cookbook: Quick. Cheap. Easy." (which is a great name, by the way) I've used and overused this recipe through the years and it has never disappointed. I have some family in Alaska. For Christmas this year, they sent us all kinds of goodies. Meats and fish galore, and I was so excited to cook with the salmon! The fiance and I have recently started eating salmon... a lot. I've been generally opposed to fish for as long as I can remember, but I've started to come around. I started with catfish (fried, duh), moved on to tilapia, and then eventually salmon. My favorite recipe is one that I got from my mom, comes together super quickly after a long day of work, and has a short cook time.
