No Bake Energy Balls

No Bake! The two best words in the world when I'm trying to plan out my breakfasts for the week. Energy! The thing that I never have enough of.

Here they are - No Bake Energy Balls. 

They are super customizable and can be changed up to basically any flavor combo! Scroll for the ingredients I used.

Ingredients:
1 cup old fashioned oats
2/3 cup coconut flakes
1/2 cup peanut butter (+ more if your mix is too dry)
1/2 cup ground flax seeds
1/2 cup chocolate chips
1/3 cup honey
1 tbsp chia seeds
1 tbsp vanilla extract

Instructions:
Mix all the above ingredients together until well blended
Form into 1 inch balls - I used a cookie dough scoop to measure, and then rolled it smooth with my hands
If the mixture seems too dry and doesn't stick well enough to form balls, mix in more peanut butter a spoonful at a time
Store in the refrigerator for about a week!


Now about how this recipe is customizable...

1. You can use any nut butter! Can't have peanuts? Use almond! Sun butter! Whatevs!
2. Use any sort of chocolate chip - dark, milk, white. Better yet, change it up completely! Raisins. Craisins. Dried fruit. Peanut butter chips. Mini m&M's. The possibilities are endless!
3. Add in cinnamon, or cocoa powder, depending on your other add ins

Yum! Such an easy grab and go breakfast when you're running out the door for work.
