Dutch Baby - German Pancake

The Dutch Baby - I'd seen it around some of my favorite food youtube channels and have always wanted to make one! I finally tried it out, and it did not disappoint.  Preheat your oven with a large cast iron skillet inside to 450°F Batter Ingredients : 4 eggs 1 cup flour 1 cup milk 2 tbsp melted butter 1/2 tsp salt Mix batter in a blender, or using a hand mixer, until smooth -- batter will be pretty thin! After your oven and skillet are preheated, throw an additional 2 tablespoons of butter into the skillet and melt for 1-2 minutes in the hot oven. Once the butter is melted, pour the batter into the skillet and return to the oven for 18 minutes until the pancake is risen sky high and golden brown. Top with powdered sugar, berries, other fruit, honey or maple syrup, or really anything your heart and taste buds desire! Custardy, sweet, crispy  and soft, and such a great breakfast! Enjoy!

Chicken Bruschetta Bake

Do you know what I love?  Easy meals. You know what else I love? Balsamic vinegar and tomatoes. With some inspiration from The Seasoned Mom and Clean Food Crush  (both delicious recipes by the way!) I have created this new favorite - the Chicken Bruschetta Bake. Don't you love a one-pan meal?!? They're my favorite.  Because doing dishes is my least favorite. Serves : 2, with lunch leftovers Ingredients : For the Chicken: 1-2 large chicken breasts salt & pepper For the Sauce: 1/4c maple syrup 1/4c dijon mustard 3 tbsp balsamic vinegar 3 garlic cloves For the Topping: 3 roma tomatoes 1 bunch fresh basil 2tbsp balsamic vinegar 1tbsp olive oil salt & pepper dried rosemary 1c shredded mozzarella Instructions : 1. Preheat oven to 425*F and grease a 9"x9" baking dish 2. Cut chicken breasts into large chunks - my chicken breasts were pretty thick, so I also butterflied the chicken before dicing. Honey Balsamic Salmon

I've posted a salmon recipe before, and I rarely branch out when it comes to salmon recipes, but last week I tried something new (cue surprised gasps here) ... Honey Balsamic Salmon Ingredients Salmon ~1/4c. Honey 1/4c. Balsamic vinegar 1 tbsp. Minced garlic Salt and pepper (to taste) Instructions 1. Preheat oven to 400°F 2. Mix together honey, balsamic vinegar, garlic, salt, and pepper in a small bowl 3. Place salmon skin side down in a baking dish 4. Pour sauce over salmon 5. Bake for 15+ minutes, depending on the size of your salmon 6. Serve! Delicious with jasmine rice and a green veggie as a side 🍚

Brown Sugar Italian Chicken

Three ingredients? Quick and easy? Flavorful and tender? Yes please! Ingredients 1/2 cup brown sugar 1 packet of dry Italian dressing seasoning Chicken breasts 1. Preheat oven to 350°F 2. In a bowl, mix together the brown sugar and Italian seasoning 3. Coat the chicken breasts with the seasoning on all sides before placing them in a greased (or foil lined) baking dish 4. Bake for 15m and flip the chicken over 5. Bake for 10m and flip again 6. Broil (about 5m) until caramelized 7. Serve and enjoy! I paired mine with some white cheddar mac & cheese and a side salad. Note : Cooking time will vary based on the size of your chicken. The amount of the seasoning you use will vary as well - I made a small portion tonight, so I ended up saving the excess brown sugar + Italian seasoning that wasn't used on the chicken. Tip : If you think you'll have seasoning leftover, do not  put the raw chicken directly into the bowl of spices. That way you can save the leftover! I use

No Bake Energy Balls

No Bake! The two best words in the world when I'm trying to plan out my breakfasts for the week. Energy! The thing that I never have enough of. Here they are - No Bake Energy Balls.  They are super customizable and can be changed up to basically any flavor combo! Scroll for the ingredients I used. Ingredients : 1 cup old fashioned oats 2/3 cup coconut flakes 1/2 cup peanut butter (+ more if your mix is too dry) 1/2 cup ground flax seeds 1/2 cup chocolate chips 1/3 cup honey 1 tbsp chia seeds 1 tbsp vanilla extract Instructions : Mix all the above ingredients together until well blended Form into 1 inch balls - I used a cookie dough scoop to measure, and then rolled it smooth with my hands If the mixture seems too dry and doesn't stick well enough to form balls, mix in more peanut butter a spoonful at a time Store in the refrigerator for about a week! Fiesta Salad with Cilantro Lime Dressing

Ever crave a salad? Did you think that was possible...? Because I made this for dinner and have eaten it twice since then and just want more 😋 What do you need? Not much! This comes together quickly and is absolutely delicious. I used a romaine mix and some shredded lettuce mixed in together for the base. Just add some pico on top, corn, black beans, fajita chicken, and my new fav homemade salad dressing (adapted from Spoonful of Flavor 's cilantro cream drizzle). See below for ingredients. Enjoy! Creamy Cilantro Lime Dressing 1/2 c plain Greek yogurt 1/4 c olive oil 1 bunch of cilantro Juice of 3 small limes 3 cloves of garlic Salt to taste 1 tsp. honey Mix the above ingredients in a food processor and that's it! Bananas ✅ Chocolate chips ✅ Magic ✅ These muffins have been my best friend and favorite breakfast since college. They are deliciously magical, keep me full all morning, make a fantastic snack, and make you lots of friends if you share them. They are my go-to recipe when I forgot about the bananas I bought during last week's grocery trip, and I will even buy bananas to let them go brown sometimes just so I can make these babies!
